Apricot Bread

Ingredients:

  • 1 cup dried apricots, chopped
  • 1 1/2 cups boiling water
  • 2 cups all-purpose flour

  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 1/2 cup orange juice
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Prepare the apricots: Place the chopped dried apricots in a small bowl and cover with the boiling water. Let them soak for about 10 minutes, then drain and set aside.
  2. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  3. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  4. Combine wet ingredients: In a separate bowl, beat the egg, then stir in the melted butter, vanilla extract, orange zest, and orange juice.
