Apple Barbecue Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 medium apples, peeled, cored, and thinly sliced
  • 1 cup barbecue sauce (your favorite brand or homemade)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, smoked paprika, and garlic powder on both sides.
  3. In a large ovenproof skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the sliced apples and sauté for 2-3 minutes until they start to soften.
  5. In a small bowl, mix the barbecue sauce, apple cider vinegar, brown sugar, and Dijon mustard. Pour the sauce over the apples in the skillet, stirring to combine.
  6. Return the chicken breasts to the skillet, spooning some of the sauce and apples over the chicken.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let the chicken rest for a few minutes before serving.
  9. Garnish with chopped parsley and serve with your favorite side dishes.
