This easy-to-make meal is ideal for busy weeknights when you want something tasty and satisfying without spending hours in the kitchen.

Ingredients:

  • 1 lb pork tenderloin, cut into 1-inch cubes
  • 1 cup pineapple chunks (fresh or canned)
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp honey or brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water
  • Salt and pepper to taste
  • Cooked rice for serving
  • Green onions and sesame seeds for garnish (optional)

Instructions:

  1. Preheat the air fryer: Set your air fryer to 400°F (200°C).
  2. Season the pork: Toss the cubed pork with olive oil, soy sauce, salt, and pepper. Place the pork in the air fryer basket in a single layer and cook for 12-15 minutes, shaking the basket halfway through until the pork is golden and cooked through.
  3. Cook the vegetables: In a skillet, heat a little oil over medium heat. Add the chopped bell pepper and onion, and cook for 5 minutes until slightly softened. Stir in the pineapple chunks and cook for an additional 2-3 minutes.
  4. Make the sauce: In a small bowl, whisk together the ketchup, rice vinegar, honey, cornstarch, and water until smooth. Pour the mixture into the skillet with the vegetables and pineapple. Stir and simmer for 2-3 minutes, until the sauce thickens and becomes glossy.
  5. Combine: Once the pork is done, toss the cooked pork into the skillet with the sweet and sour sauce. Stir to coat everything evenly.
  6. Serve: Serve the sweet and sour pineapple pork over cooked rice, and garnish with green onions and sesame seeds if desired.
