Ingredients:

  • 4 catfish fillets
  • 2 tablespoons olive oil
  • 1 tablespoon Creole seasoning (store-bought or homemade)
  • Salt and pepper to taste

For the Creole Sauce:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped, for garnish
  • Cooked rice or crusty bread, for serving

Instructions:

  1. Season the catfish fillets with Creole seasoning, salt, and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add the catfish fillets to the hot skillet and sear for 3-4 minutes per side, until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes. Stir in the garlic and cook for 1 more minute.
  4. Add the diced tomatoes, smoked paprika, cayenne pepper (if using), thyme, bay leaf, and a pinch of salt and pepper. Simmer the sauce for 10-12 minutes, allowing it to thicken slightly.
  5. Return the seared catfish fillets to the skillet, spooning the sauce over them. Let them cook together for another 2-3 minutes to absorb the flavors.
  6. Serve the catfish fillets over rice or with crusty bread, garnished with fresh parsley.

This Seared Catfish Creole brings together the vibrant flavors of the South, creating a dish that’s full of spice, warmth, and comfort. Perfect for a satisfying dinner that transports you to the heart of Creole cuisine!
