Aamras

Aamras is a classic Indian dessert made from ripe mangoes, often enjoyed as a side dish or dessert during summer, especially in regions like Gujarat, Maharashtra, and Rajasthan. Its name directly translates to “mango nectar,” and it perfectly captures the fruit’s natural sweetness and lusciousness. Traditionally served with puris (fried Indian bread) or eaten as is, aamras is a celebration of mangoes in their purest form. With the addition of a few spices and a touch of sweetness, this simple yet divine dish brings out the essence of the king of fruits.

Ingredients:

  • 3-4 ripe mangoes (Alphonso or Kesar mangoes work best)
  • 2-3 tablespoons sugar (optional, adjust to taste)
  • 1/4 teaspoon cardamom powder
  • A pinch of saffron strands (optional)
  • 1/4 cup milk or water (adjust to desired consistency)
  • A few chopped nuts like almonds or pistachios for garnish (optional)

Instructions:

  1. Prepare the Mangoes: Peel and chop the mangoes, discarding the seeds. Place the mango pulp in a blender.
  2. Blend: Add sugar, cardamom powder, and saffron (if using) to the mangoes. Blend until smooth. You can add milk or water at this stage to adjust the consistency as per your preference.
  3. Chill: Refrigerate the aamras for at least 30 minutes before serving. This helps the flavors meld together and makes it more refreshing.
  4. Serve: Pour the aamras into serving bowls and garnish with chopped nuts if desired. You can enjoy it as is or pair it with puris for a traditional touch.

Aamras is best enjoyed fresh, but you can also store it in the refrigerator for up to two days.
