Ingredients:

  • 2 cups cooked, shredded chicken (rotisserie chicken works well)
  • 1 1/2 cups shredded cheddar or Monterey Jack cheese
  • 1/2 cup salsa or diced tomatoes with green chilies
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 flour tortillas
  • 2 tablespoons olive oil or melted butter
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro, jalapeños

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. Prepare the Chicken Filling:
    • In a large bowl, combine the shredded chicken, shredded cheese, salsa or diced tomatoes, ground cumin, chili powder, garlic powder, salt, and pepper. Mix well until all the ingredients are evenly distributed.
  3. Assemble the Quesadillas:
    • Lay four tortillas on the prepared baking sheet. Evenly distribute the chicken and cheese mixture over each tortilla, spreading it out to cover the entire surface. Place another tortilla on top of each one, pressing down gently to secure.
  4. Bake the Quesadillas:
    • Brush the tops of the quesadillas with olive oil or melted butter. Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden brown and crispy. For an extra crispy finish, flip the quesadillas halfway through baking.
  5. Serve:
    • Remove the quesadillas from the oven and let them cool for a couple of minutes. Slice each quesadilla into quarters and serve hot with your choice of toppings such as sour cream, guacamole, salsa, chopped cilantro, or jalapeños.
