Ingredients:
- 4 large poblano peppers
- 1 lb shrimp, peeled and deveined, chopped
- 1 cup cooked rice
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup cream cheese, softened
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and pepper to taste
- 1 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
- Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for about 10-15 minutes, turning occasionally, until the skins are blistered and charred. Remove from the oven and let them cool slightly. Peel off the skins, cut a slit down the side of each pepper, and remove the seeds.
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
- Stir in the chopped shrimp, cumin, chili powder, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.
- In a mixing bowl, combine the cooked rice, shrimp mixture, shredded Monterey Jack cheese, and cream cheese until well mixed.
- Stuff each poblano pepper with the shrimp and rice mixture, being careful not to overfill.
- Place the stuffed peppers back on the baking sheet and bake for an additional 10 minutes until the cheese is melted and bubbly.
- Remove from the oven and garnish with fresh cilantro. Serve with lime wedges on the side.
These Shrimp-Stuffed Poblano Peppers are sure to impress with their rich flavors and spicy kick!
