Ingredients:
- 2 pie crusts (homemade or store-bought)
- 6-7 ripe peaches, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup cornstarch
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 tbsp unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- Coarse sugar, for sprinkling (optional)
Instructions:
- Preheat your oven to 425°F (220°C). Roll out one pie crust and fit it into a 9-inch pie dish, trimming any excess dough.
