Peaches ‘n Cream Muffins

Ingredients

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.
  2. Prepare the Cream Filling:
    • In a small bowl, beat together the cream cheese, 1/4 cup of sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Set aside.
  3. Make the Muffin Batter:
    • In a large mixing bowl, whisk together the flour, 1 cup of sugar, baking powder, salt, and cinnamon.
    • In another bowl, combine the melted butter, yogurt, eggs, and 1 teaspoon of vanilla extract. Mix well until smooth.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
    • Gently fold in the diced peaches.
  4. Assemble the Muffins:
    • Fill each muffin cup halfway with the muffin batter.
