Greek Lemon Potatoes

Greek Lemon Potatoes are a quintessential Mediterranean side dish, known for their tangy, citrus-forward flavor and melt-in-your-mouth texture. Roasted until golden and crispy on the outside, while soft and tender on the inside, these potatoes are infused with a savory blend of olive oil, garlic, lemon juice, and oregano. The result is a comforting and aromatic dish that pairs beautifully with grilled meats, seafood, or a fresh Greek salad.

Ingredients:

  • 2 lbs potatoes, peeled and cut into wedges
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp dried oregano
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the olive oil, lemon juice, oregano, garlic, salt, and pepper.
  3. Toss the potato wedges in the lemon mixture until well coated.
  4. Arrange the potatoes in a single layer on a large baking dish or sheet pan. Pour the chicken broth over the potatoes.
  5. Roast for 45-50 minutes, stirring occasionally, until the potatoes are golden brown and the liquid has evaporated.
  6. Remove from the oven and garnish with fresh parsley, if desired. Serve warm as a flavorful side dish. Enjoy!
