ZIPPY’S VEGETARIAN CHILI

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 carrots, diced
  • 1 zucchini, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes with their juice
  • 1 can (15 oz) tomato sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Salt and black pepper to taste
  • 1 cup vegetable broth or water
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Sauté the Vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic, green and red bell peppers, and carrots. Sauté for another 5-7 minutes until the vegetables are tender.
