Mexican Pork Stew

This hearty Mexican Pork Stew, known as “Guisado de Puerco,” is a flavorful and comforting dish that brings the rich and earthy flavors of traditional Mexican cuisine to your table. Tender pork shoulder is slowly simmered in a vibrant tomato and chili-based broth, infused with spices like cumin, oregano, and garlic. The stew is thickened with hominy or potatoes, making it a satisfying meal on its own. Perfect for cooler days or whenever you’re craving something warm and nourishing, this stew pairs beautifully with fresh tortillas or a side of rice.

Ingredients:

  • 2 lbs pork shoulder, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tsp chili powder
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 cups hominy (or 2 large potatoes, peeled and cubed)
  • 2 dried ancho or guajillo chilies, seeded and soaked in hot water until soft
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the Pork: Season the pork cubes with salt and pepper. In a large pot, heat the vegetable oil over medium-high heat. Add the pork and brown on all sides, working in batches if necessary. Remove the pork and set aside.
  2. Sauté Vegetables: In the same pot, add the diced onion and cook until softened, about 5 minutes. Add the minced garlic, cumin, oregano, and chili powder, cooking for another minute until fragrant.
  3. Blend Chilies: In a blender, puree the soaked chilies with a little of the soaking water until smooth. Add this chili paste to the pot and stir to combine with the onions and spices.
  4. Add Tomatoes and Broth: Pour in the diced tomatoes and chicken broth, stirring to combine. Return the browned pork to the pot along with the hominy or potatoes and the bay leaf.
  5. Simmer the Stew: Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the pork is tender and the flavors are well developed. Stir occasionally and adjust seasoning with salt and pepper as needed.
  6. Serve: Remove the bay leaf before serving. Ladle the stew into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for a zesty kick. Enjoy with warm tortillas or over rice.
