Zucchini Rice Pilaf

Ingredients:

  • Juice of half a lemon (optional, for a fresh finish)

Instructions:

  1. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rice and cook, stirring frequently, for about 2-3 minutes until the rice is lightly toasted.
  2. Pour in the chicken or vegetable broth, bring to a boil, then reduce the heat to low. Cover and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  3. While the rice is cooking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the minced garlic and diced zucchini to the skillet, and cook for another 5-7 minutes, until the zucchini is tender but not mushy.
  5. Stir in the cumin, turmeric, black pepper, and salt, and cook for another minute to allow the spices to become fragrant.
  6. Once the rice is cooked, fluff it with a fork and add it to the skillet with the zucchini mixture. Gently stir to combine, making sure the rice is evenly coated with the spices and vegetables.
  7. Remove from heat and stir in the fresh parsley and dill, if using. Squeeze a bit of lemon juice over the pilaf for a bright, fresh flavor, if desired.
