Sweet Ginger Ribs

Ingredients

  • 2 racks of pork ribs (about 4 pounds total)
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar

  • 3 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 2 green onions, thinly sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Prepare the Ribs: Remove the membrane from the back of the ribs. This can be done by sliding a knife under the membrane and pulling it off with your fingers. Pat the ribs dry with paper towels.
  2. Make the Marinade: In a large bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, black pepper, red pepper flakes (if using), brown sugar, and ketchup until well combined.
  3. Marinate the Ribs: Place the ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are evenly coated. Seal the bag or cover the dish, and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  4. Preheat the Oven: Preheat your oven to 300°F (150°C). Line a baking sheet with aluminum foil and place a wire rack on top.
  5. Bake the Ribs: Remove the ribs from the marinade, allowing any excess to drip off. Place the ribs on the prepared rack, bone side down. Cover the ribs with foil and bake in the preheated oven for 2.5 to 3 hours, or until the meat is tender and pulling away from the bones.
  6. Broil the Ribs: Preheat your broiler. Remove the foil from the ribs and brush them with some of the remaining marinade. Broil the ribs for 3-5 minutes, or until the glaze is caramelized and sticky.
