Ingredients:

  • 2 tablespoons rice vinegar
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon sriracha or your favorite hot sauce (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 tablespoon vegetable oil
  • Sliced green onions and sesame seeds, for garnish

Instructions:

  1. Sauté the Chicken: Set the Instant Pot to ‘Sauté’ mode. Add the vegetable oil. Once hot, add the chicken pieces and sauté for about 5 minutes until lightly browned on all sides. Remove the chicken and set aside.
  2. Prepare the Sauce: In the Instant Pot, combine the orange juice, soy sauce, honey, rice vinegar, tomato paste, garlic, ginger, and sriracha (if using). Stir well to combine.
