Pork Piperade

Ingredients

  • 1 pound pork tenderloin, cut into 1-inch cubes
  • 2 tablespoons olive oil

  • 1 green bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 2 large tomatoes, chopped
  • 1 teaspoon sweet paprika
  • Salt and black pepper, to taste
  • 1/2 cup white wine (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Pork: Season the pork cubes with salt and black pepper. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the pork cubes and brown on all sides, about 5-7 minutes. Remove the pork from the skillet and set aside.
  2. Cook the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the onion, red bell pepper, and green bell pepper. Sauté until the vegetables are soft and the onion is translucent, about 8-10 minutes.
  3. Add Garlic and Tomatoes: Stir in the garlic and cook for another minute until fragrant. Add the chopped tomatoes and paprika, and season with additional salt and black pepper. Cook for 5 minutes until the tomatoes start to break down.
  4. Simmer with Pork: Return the pork to the skillet. Add the white wine (if using) and stir to combine. Reduce the heat to low, cover, and simmer for 15-20 minutes until the pork is cooked through and the flavors meld together.
  5. Serve: Garnish with chopped fresh parsley before serving. Enjoy hot with crusty bread or over a bed of rice.
