Ingredients

For the Sweet Potato Topping

  • 2 pounds sweet potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste

For the Filling

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef, lamb, or turkey
  • 1 cup carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup beef or vegetable broth
  • Salt and black pepper to taste

Instructions

  1. Prepare the Sweet Potato Topping:
    • Place the sweet potatoes in a large pot and cover them with water. Bring to a boil over medium-high heat and cook until tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot. Add the milk, butter, salt, and black pepper. Mash until smooth and creamy. Set aside.
  2. Make the Filling:
    • Preheat your oven to 400°F (200°C).
    • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 5 minutes.
    • Add the ground meat and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Stir in the carrots, peas, and corn. Cook for an additional 5 minutes until the vegetables are slightly tender.
    • Add the tomato paste, Worcestershire sauce, thyme, rosemary, broth, salt, and pepper. Stir well and let the mixture simmer for 5 minutes, allowing the flavors to meld and the liquid to reduce slightly.
  3. Assemble the Pie:
    • Transfer the meat and vegetable mixture to a 9×13-inch baking dish, spreading it evenly.
    • Spoon the sweet potato mash over the filling, spreading it smoothly with a spatula to cover the filling completely.
  4. Bake:
    • Place the dish in the preheated oven and bake for 20-25 minutes, or until the sweet potato topping is slightly golden and the filling is bubbling.
  5. Serve:
    • Allow the shepherd’s pie to cool for a few minutes before serving. Enjoy this comforting and hearty dish with a side salad or steamed vegetables.

Sweet Potato Shepherd’s Pie is a wholesome and comforting dish that brings a nutritious twist to a beloved classic, making it a perfect meal for any occasion. Enjoy the rich flavors and satisfying textures with family and friends!
