Air-Fryer Samosas

Air-Fryer Samosas are a healthier and equally delicious version of the traditional deep-fried Indian samosas. These savory pastries are filled with a spiced mixture of potatoes, peas, and aromatic herbs, encased in a crispy golden wrapper. Ingredients:

  • For the Dough:
    • 1 1/2 cups all-purpose flour
    • 1/4 teaspoon salt
    • 2 tablespoons vegetable oil
    • 1/2 cup water (more as needed)
  • For the Filling:
    • 2 large potatoes, peeled and diced
    • 1/2 cup green peas (fresh or frozen)
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1-inch piece ginger, minced
    • 2 green chilies, finely chopped (optional)
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander powder
    • 1 teaspoon garam masala
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon red chili powder (optional)
    • Salt, to taste
    • 2 tablespoons vegetable oil
    • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Prepare the Dough:
    • In a large mixing bowl, combine the all-purpose flour and salt.
    • Add the vegetable oil and mix until the flour resembles coarse crumbs.
    • Gradually add water and knead until you have a smooth, elastic dough. Cover with a damp cloth and set aside to rest while you prepare the filling.
  2. Prepare the Filling:
    • Boil the diced potatoes until tender. Drain and set aside.
    • In a large skillet, heat the vegetable oil over medium heat.
    • Add the cumin seeds and let them sizzle for a few seconds.
    • Add the chopped onion, minced garlic, ginger, and green chilies (if using). Sauté until the onions are golden brown.
    • Stir in the coriander powder, garam masala, turmeric powder, red chili powder (if using), and salt.
    • Add the boiled potatoes and green peas. Mash the mixture slightly and cook for another 5 minutes, stirring occasionally.
    • Remove from heat and let the filling cool. Garnish with chopped cilantro.
  3. Assemble the Samosas:
    • Divide the dough into small balls. Roll each ball into a thin oval shape on a lightly floured surface.
    • Cut the oval in half to form two semi-circles.
    • Form a cone shape with each semi-circle, sealing the edge with a little water.
    • Fill the cone with the potato and pea mixture, then seal the top edge with water, pressing firmly to ensure it’s closed.
  4. Air Fry the Samosas:
    • Preheat your air fryer to 350°F (175°C).
    • Lightly brush or spray the samosas with vegetable oil.
    • Place the samosas in a single layer in the air fryer basket, making sure they are not touching. You may need to cook them in batches.
    • Air fry the samosas for 10-12 minutes, turning them halfway through, until they are golden brown and crispy.
  5. Serve:
    • Remove the samosas from the air fryer and let them cool slightly.
    • Serve warm with your favorite chutneys, such as mint chutney or tamarind chutney.
