French Onion Soup is a timeless classic that combines sweet, caramelized onions with a rich, savory broth, topped with crusty bread and melted cheese. This comforting and elegant soup is perfect for a cozy dinner or a special occasion, offering a harmonious blend of flavors and textures that are both satisfying and heartwarming. The slow-cooked onions develop a deep, complex flavor, while the broth, enriched with wine and herbs, creates a luxurious base. Finished with a golden, cheesy topping, French Onion Soup is a delightful dish that captures the essence of French cuisine.

Ingredients:

  • 6 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 8 cups beef broth
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and freshly ground black pepper, to taste
  • 1 baguette, sliced into 1-inch thick rounds
  • 2 cups grated Gruyère cheese (or Swiss cheese)

Instructions:

  1. Caramelize the Onions:
    • In a large, heavy-bottomed pot, melt the butter and olive oil over medium heat.
    • Add the sliced onions and stir to coat them in the butter and oil.
    • Cook the onions, stirring occasionally, for about 15 minutes until they soften and become translucent.
    • Sprinkle the sugar over the onions and continue to cook for another 30-45 minutes, stirring frequently, until the onions are deep golden brown and caramelized. Be careful not to let them burn.
  2. Add the Garlic and Wine:
    • Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
    • Add the white wine, if using, and deglaze the pot, scraping up any browned bits from the bottom. Let the wine simmer for about 5 minutes until it reduces slightly.
  3. Make the Broth:
    • Add the beef broth, bay leaf, and thyme to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes. Season with salt and freshly ground black pepper to taste.
    • Remove the bay leaf before serving.
  4. Prepare the Bread and Cheese:
    • While the soup is simmering, preheat your oven’s broiler.
    • Arrange the baguette slices on a baking sheet and broil for 1-2 minutes on each side until golden and crispy. Watch closely to prevent burning.
    • Set the toasted baguette slices aside.
  5. Assemble the Soup:
    • Ladle the hot soup into oven-safe bowls.
    • Place one or two slices of toasted baguette on top of each bowl of soup.
    • Sprinkle a generous amount of grated Gruyère cheese over the bread.
  6. Broil the Soup:
    • Place the bowls on a baking sheet and broil in the oven until the cheese is melted, bubbly, and golden brown, about 2-3 minutes. Keep a close eye on them to avoid burning.
  7. Serve:
    • Carefully remove the bowls from the oven and let them cool slightly before serving.

Enjoy your rich and comforting French Onion Soup, a perfect dish for any cozy dinner or special occasion!
