Ingredients

  • 1 leftover ham bone with some meat attached
  • 8 cups water
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 can (15 ounces) diced tomatoes
  • 1 can (15 ounces) cannellini beans or great northern beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Make the Broth: In a large pot or Dutch oven, combine the ham bone, water, and bay leaf. Bring to a boil over medium-high heat, then reduce the heat to low and simmer for 1-2 hours. Skim off any foam that forms on the surface. Remove the ham bone and set it aside to cool. Strain the broth and discard the bay leaf.
  2. Prepare the Vegetables: In the same pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes until the onion is soft and translucent.
  3. Cook the Vegetables: Add the carrots, celery, and potatoes to the pot. Sauté for another 5 minutes until the vegetables begin to soften.
  4. Add the Broth and Other Ingredients: Pour the strained broth back into the pot. Stir in the diced tomatoes, beans, thyme, oregano, salt, and black pepper. Bring the mixture to a simmer.
  5. Add Ham: Once the ham bone is cool enough to handle, remove any remaining meat and shred it into bite-sized pieces. Add the shredded ham back into the soup.
  6. Simmer the Soup: Continue to simmer the soup for another 20-30 minutes until all the vegetables are tender and the flavors are well combined.
  7. Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread.

Ham Bone Soup is a flavorful and comforting dish that makes the most of leftover ham, offering a nourishing and satisfying meal perfect for any occasion. Enjoy the rich flavors and hearty ingredients in this classic soup!
