  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 cans (15 oz each) cannellini beans or Great Northern beans, drained and rinsed
  • Salt and pepper to taste
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sliced pepperoni or other favorite pizza toppings (optional)
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Sauté the Aromatics:
    • In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-6 minutes until softened and translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  2. Prepare the Sauce:
    • Stir in the crushed tomatoes, dried oregano, dried basil, dried thyme, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 10 minutes, allowing the flavors to meld together.
  3. Add the Beans:
    • Add the drained and rinsed beans to the skillet. Stir well to coat the beans in the tomato sauce. Season with salt and pepper to taste. Simmer for another 10 minutes, allowing the beans to absorb the flavors.
  4. Preheat the Broiler:
    • Preheat your oven’s broiler.
  5. Add Cheese and Toppings:
    • Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top of the beans. If using, add the sliced pepperoni or other favorite pizza toppings.
  6. Broil the Beans:
    • Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted, bubbly, and golden brown.
  7. Serve:
    • Remove from the oven and let cool slightly. Garnish with chopped fresh basil or parsley before serving.
