Ingredients

  • 2 cups cooked, shredded chicken
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 12 small corn tortillas
  • Vegetable oil for frying
  • Optional toppings: sour cream, guacamole, salsa, chopped cilantro, lime wedges

Instructions

  1. Prepare the Filling:
    • In a large bowl, combine the shredded chicken, cumin, garlic powder, onion powder, chili powder, salt, and pepper. Mix well until the chicken is evenly coated with the spices.
    • Stir in the shredded cheese until well combined.
  2. Assemble the Flautas:
    • Warm the corn tortillas in a microwave or on a skillet to make them pliable.
    • Place about 2 tablespoons of the chicken mixture along the center of each tortilla.
    • Roll the tortilla tightly around the filling and secure with a toothpick.
  3. Fry the Flautas:
    • In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat.
    • Once the oil is hot, carefully place the flautas seam side down into the skillet.
    • Fry the flautas in batches, turning occasionally, until they are golden brown and crispy on all sides, about 3-4 minutes per batch.
    • Remove the flautas from the oil and drain on paper towels.
  4. Serve:
    • Remove the toothpicks and serve the flautas hot with your choice of toppings such as sour cream, guacamole, or salsa. Garnish with chopped cilantro and lime wedges if desired.
