Ingredients

  • 1 pound dried white beans (such as Great Northern or navy beans)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 ham hock or 2 cups cooked ham, diced
  • 8 cups chicken or vegetable broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • Salt to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the beans:
    • Rinse the dried beans under cold water. Place them in a large pot, cover with water, and bring to a boil. Remove from heat and let the beans soak for at least 1 hour. Drain and rinse again before using.
  2. Sauté the vegetables:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened. Add the minced garlic and cook for another minute.
  3. Add the ham and broth:
    • Stir in the ham hock or diced ham, drained beans, chicken broth, bay leaves, thyme, and black pepper. Bring to a boil, then reduce the heat to low and cover.
  4. Simmer the soup:
    • Let the soup simmer for 1 1/2 to 2 hours, or until the beans are tender and the flavors are well developed. If using a ham hock, remove it from the pot, shred the meat, and return it to the soup, discarding the bone.
  5. Adjust seasoning:
    • Taste the soup and add salt if needed. Remove the bay leaves before serving.
  6. Serve:
    • Ladle the soup into bowls and garnish with fresh parsley. Serve hot with crusty bread or rolls.

Enjoy your Ham and Bean Soup as a warm, hearty meal that’s perfect for any occasion, offering rich flavors and a satisfying texture that will keep you coming back for more!
