Norwegian Lefse

Norwegian Lefse is a traditional flatbread with a soft and tender texture that has been a beloved staple in Norwegian cuisine for centuries. Instructions:

  1. Cook the Potatoes:
    • Peel and quarter the potatoes. Place them in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
    • Drain the potatoes and return them to the pot. Add the butter, cream, salt, and sugar, and mash until smooth and creamy. Allow the mixture to cool completely.
  2. Prepare the Dough:
    • Once the potato mixture has cooled, transfer it to a large mixing bowl. Gradually add the flour, starting with 1 1/2 cups, mixing until a soft dough forms. The dough should be workable but not sticky. Add more flour as needed.
  3. Roll Out the Lefse:
    • Divide the dough into golf ball-sized portions. On a floured surface, roll each portion into a thin circle, about 1/8 inch thick. Use a rolling pin with a cloth cover and a pastry board with a pastry cloth to prevent sticking.
  4. Cook the Lefse:
    • Preheat a griddle or large non-stick skillet over medium heat. Transfer the rolled lefse onto the griddle using a lefse stick or a large spatula.
    • Cook for about 1-2 minutes on each side, or until light brown spots appear. Remove from the griddle and place on a clean towel to cool.
  5. Serve:
    • Serve lefse warm or at room temperature. Spread with butter and sprinkle with sugar for a sweet treat, or fill with savory ingredients for a delicious snack or meal.
