Ingredients

  • 1 pound chicken breasts, thinly sliced
  • 12 ounces linguine or spaghetti
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup white wine
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Lemon wedges (for serving)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to the package instructions until al dente. Drain and set aside.
  2. Sauté the chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for 4-5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. Prepare the scampi sauce: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the minced garlic and red pepper flakes (if using), and sauté for about 1 minute until fragrant.
  4. Deglaze the skillet: Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and cook for about 3-4 minutes until slightly reduced.
  5. Finish the sauce: Stir in the fresh lemon juice and unsalted butter, allowing the butter to melt and combine with the sauce. Season with salt and pepper to taste.
  6. Combine pasta and chicken: Return the cooked chicken to the skillet along with the cooked pasta. Toss everything together to coat the chicken and pasta in the sauce.
  7. Serve: Transfer the Chicken Scampi Pasta to serving plates. Garnish with grated Parmesan cheese, chopped fresh parsley, and lemon wedges.

Enjoy your Chicken Scampi Pasta as a delicious and elegant meal that combines the rich flavors of garlic, lemon, and white wine for a perfect dining experience.
