The creamy sauce complements the natural flavor of the salmon, while the sun-dried tomatoes and spinach add a burst of color and nutrition. Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Season the salmon: Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  2. Sear the salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets skin-side up and cook for 4-5 minutes until golden brown. Flip the fillets and cook for another 2-3 minutes until cooked through. Remove the salmon from the skillet and set aside.
  3. Sauté the garlic: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Make the sauce: Stir in the heavy cream, chicken broth, sun-dried tomatoes, and Italian seasoning. Bring the mixture to a simmer and cook for 3-4 minutes until slightly thickened.
  5. Add the spinach and cheese: Add the fresh spinach to the skillet and stir until wilted. Stir in the grated Parmesan cheese until melted and combined.
  6. Combine and serve: Return the salmon fillets to the skillet, nestling them into the creamy sauce. Spoon some sauce over the salmon and let everything cook together for another 2-3 minutes.
  7. Garnish: Remove the skillet from the heat and garnish with chopped fresh basil or parsley.

Enjoy your Tuscan Salmon as a delightful and sophisticated meal that brings the flavors of Italy to your table, offering a perfect balance of creaminess, freshness, and savory goodness. Serve it with crusty bread, pasta, or rice to soak up the delicious sauce.
