PASTA WITH ASPARAGUS

  • Extra Parmesan, for serving

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining the pasta. Drain and set aside.
  2. Blanch the asparagus: While the pasta is cooking, bring a small pot of salted water to a boil. Add the asparagus and cook for 2-3 minutes, until bright green and tender but still slightly crisp. Drain and immediately transfer the asparagus to a bowl of ice water to stop the cooking process. Drain again and set aside.
  3. Sauté the garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using), and sauté for 1-2 minutes until fragrant, being careful not to let the garlic burn.
  4. Combine the pasta and asparagus: Add the cooked pasta and blanched asparagus to the skillet with the garlic. Toss to combine, adding a little reserved pasta water to help coat the pasta in the sauce. Stir in the grated Parmesan and lemon juice (if using).
  5. Season and serve: Season with salt and pepper to taste. Garnish with fresh parsley or basil and extra Parmesan. Serve hot.
