Raw Key Lime Pie

Raw Key Lime Pie is a delicious and refreshing dessert that packs a zesty punch, perfect for hot days when you want something light but indulgent. Made with nutrient-dense ingredients, this raw pie is gluten-free, dairy-free, and naturally sweetened, making it an excellent choice for those following a clean eating or plant-based diet. The crust is made from a blend of nuts and dates, while the creamy filling features avocados for a silky texture, along with the tangy brightness of fresh key lime juice. It’s a guilt-free treat that’s surprisingly easy to whip up and can be enjoyed straight from the fridge or freezer.

Ingredients:

Crust:

  • 1 ½ cups raw almonds or walnuts
  • 1 cup Medjool dates (pitted)
  • 1 tablespoon coconut oil
  • Pinch of sea salt

Filling:

  • 3 ripe avocados (peeled and pitted)
  • ½ cup freshly squeezed key lime juice
  • ¼ cup coconut oil (melted)
  • ½ cup maple syrup or agave syrup
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Garnish (optional):

  • Lime slices
  • Shredded coconut
  • Fresh berries

Instructions:

  1. Prepare the crust: In a food processor, pulse the raw almonds or walnuts until finely ground. Add the dates, coconut oil, and a pinch of sea salt, and process until the mixture sticks together when pressed between your fingers. Press the crust mixture into the bottom of a pie dish, creating an even layer. Place in the freezer to set while preparing the filling.
  2. Make the filling: In a blender or food processor, combine the avocados, key lime juice, melted coconut oil, maple syrup, lime zest, vanilla extract, and a pinch of sea salt. Blend until the mixture is smooth and creamy.
  3. Assemble the pie: Pour the filling into the chilled crust, spreading it evenly with a spatula. Smooth the top.
  4. Chill the pie: Place the pie in the fridge for at least 3 hours or in the freezer for about 1 hour until the filling is firm and set.
  5. Garnish and serve: Garnish with lime slices, shredded coconut, or fresh berries if desired. Slice and serve chilled.

Enjoy this cool and tangy dessert! Keep leftovers stored in the fridge or freezer for up to 3 days.
