Chocolate Lamb Chili

Ingredients:

  • 1 ½ lbs lamb shoulder, cut into small cubes
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño, seeded and minced
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup beef broth
  • 2 oz dark chocolate (70% cocoa or higher), chopped
  • Salt and pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Sour cream, for serving (optional)

Instructions:

  1. Sear the Lamb: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the lamb cubes in batches and sear them until browned on all sides. Remove the lamb from the pot and set it aside.
  2. Sauté the Vegetables: In the same pot, add the diced onion and cook until it becomes translucent, about 5 minutes. Add the garlic, red and green bell peppers, and jalapeño. Cook for another 3-4 minutes until the vegetables are softened.
  3. Add the Spices: Stir in the chili powder, cumin, smoked paprika, cinnamon, and coriander. Cook for 1-2 minutes until the spices are fragrant.
  4. Combine Ingredients: Return the seared lamb to the pot. Add the diced tomatoes, black beans, kidney beans, and beef broth. Stir well to combine.
  5. Simmer: Bring the chili to a simmer, then reduce the heat to low. Cover the pot and let it cook for 1 ½ to 2 hours, stirring occasionally, until the lamb is tender.
  6. Add the Chocolate: Stir in the chopped dark chocolate until it melts completely into the chili. Season with salt and pepper to taste.
  7. Serve: Ladle the chili into bowls and garnish with fresh cilantro. Add a dollop of sour cream if desired. Enjoy this unique and flavorful chili with your favorite sides!
