Stuffed Pattypan Squash

Pattypan squash, with its distinct scalloped edges and vibrant yellow or green hues, makes for a stunning and delicious presentation when stuffed. Ingredients:

  • 4 medium pattypan squash
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, finely diced
  • 1 cup cooked quinoa or rice
  • ½ cup grated Parmesan cheese (or your preferred cheese)
  • ¼ cup breadcrumbs (optional for a crunchy topping)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Prepare the squash: Cut the tops off the pattypan squash and carefully scoop out the centers, leaving a ¼-inch thick shell. Reserve the scooped flesh for the filling.
  3. Cook the vegetables: Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing until softened, about 3-4 minutes. Add the bell pepper and the reserved squash flesh, and cook for another 3-4 minutes until tender.
  4. Make the filling: Stir in the cooked quinoa or rice, Parmesan cheese, dried oregano, salt, and pepper. Mix everything together well, allowing the flavors to combine.
  5. Stuff the squash: Spoon the filling into the hollowed-out pattypan squash, packing it in slightly. If desired, sprinkle breadcrumbs on top for added texture.
  6. Bake: Place the stuffed squash in the prepared baking dish. Cover with foil and bake for 25-30 minutes. Remove the foil and bake for an additional 10 minutes, until the squash is tender and the filling is golden on top.
  7. Garnish and serve: Once cooked, remove from the oven and let cool slightly. Garnish with fresh parsley or basil before serving.
