Ingredients:

  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups milk (preferably whole)
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (panko preferred)
  • 2 tbsp melted butter (for topping)
  • 1/2 cup grated Parmesan cheese (optional)

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Cook Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions. Drain and set aside.
  3. Make Cheese Sauce: In a saucepan over medium heat, melt 4 tablespoons of butter. Whisk in the flour and cook for about 1-2 minutes to create a roux. Gradually whisk in the milk, ensuring no lumps remain. Continue cooking until the mixture thickens, about 5-7 minutes. Stir in the Dijon mustard, garlic powder, onion powder, salt, and pepper. Remove from heat and gradually add the shredded cheddar and mozzarella cheese, stirring until melted and smooth.
  4. Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce, ensuring all the pasta is well-coated.
  5. Prepare for Baking: Transfer the mac and cheese mixture to a greased 9×13-inch baking dish. In a separate bowl, mix the breadcrumbs with 2 tablespoons of melted butter and the grated Parmesan (if using). Sprinkle this mixture evenly over the mac and cheese.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbling.
  7. Serve: Let it cool for a few minutes before serving. Enjoy your deliciously cheesy Baked Mac and Cheese!
