- 8 ounces crab meat (fresh or canned), drained
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 2 cups salsa verde
- 1 cup sour cream
- 12 corn tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Cook the Seafood: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté for about 3 minutes until the onion is soft. Add the shrimp, crab meat, chili powder, cumin, smoked paprika, salt, and black pepper. Cook for 4-5 minutes until the shrimp are pink and cooked through. Remove from heat and set aside.
- Prepare the Sauce: In a mixing bowl, combine the salsa verde and sour cream. Mix until smooth.
- Assemble the Lasagna: Spread a thin layer of the salsa verde sauce on the bottom of a 9×13-inch baking dish. Place 4 corn tortillas over the sauce, overlapping as necessary. Top with half of the seafood mixture and one-third of the Monterey Jack and cheddar cheese. Repeat the layers with another 4 tortillas, the remaining seafood mixture, one-third of the cheese, and a third of the sauce. Finish with a final layer of tortillas, the remaining sauce, and the remaining cheese.
- Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Serve: Let the lasagna cool for a few minutes before slicing. Garnish with chopped cilantro and serve with lime wedges if desired.
