Sweet Boondi

Sweet Boondi is a popular Indian dessert made from tiny, deep-fried gram flour (besan) droplets soaked in sugar syrup. These bite-sized, crunchy spheres are flavored with aromatic cardamom and often garnished with slivers of nuts, making them a delightful treat. Sweet Boondi can be served during festivals, celebrations, or as a sweet snack to satisfy your sugar cravings. The golden, syrup-coated boondis glisten and offer a delightful crunch with every bite. It’s a simple yet delicious dessert that captures the essence of Indian sweets.

Ingredients:

  • 1 cup gram flour (besan)
  • 1/2 cup water (or as needed)
  • A pinch of baking soda
  • Oil for frying
  • 1 cup sugar
  • 1/2 cup water (for sugar syrup)
  • 1/4 tsp cardamom powder
  • Chopped pistachios or almonds (for garnish)

Instructions:

  1. Prepare the Boondi Batter:
    • In a mixing bowl, sift the gram flour. Add a pinch of baking soda.
    • Gradually add water to the flour and mix to form a smooth, flowing batter. The consistency should be like a pancake batter, neither too thick nor too thin.
  2. Fry the Boondi:
    • Heat oil in a deep pan for frying.
    • Hold a perforated ladle (boondi jhara) over the hot oil. Pour some batter over the ladle and gently tap or shake it so that small droplets fall into the oil.
    • Fry the boondi on medium heat until golden and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with the remaining batter.
  3. Prepare the Sugar Syrup:
    • In a separate saucepan, combine sugar and water. Heat on medium until the sugar dissolves completely and forms a one-string consistency syrup.
    • Add cardamom powder and mix well.
  4. Combine Boondi with Syrup:
    • Once all the boondi is fried, immediately add them to the warm sugar syrup.
    • Stir gently to ensure that the boondis soak in the syrup evenly. Let it rest for about 10-15 minutes.
  5. Garnish and Serve:
    • Garnish with chopped pistachios or almonds.
    • Serve warm or at room temperature. Enjoy your sweet boondi!
