CHOCOLATE MERINGUE PIE

Instructions

  1. Prepare the Chocolate Filling: In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Gradually whisk in the milk over medium heat, stirring constantly, until the mixture thickens and starts to bubble, about 5-7 minutes.
  2. Temper the Egg Yolks: In a small bowl, whisk the egg yolks. Slowly add about 1/2 cup of the hot chocolate mixture to the egg yolks, whisking constantly to temper them. Pour the egg yolk mixture back into the saucepan with the chocolate mixture and cook for another 2-3 minutes, stirring constantly, until thickened.
  3. Add Butter and Vanilla: Remove the saucepan from heat and stir in the butter and vanilla extract until smooth. Pour the chocolate filling into the pre-baked pie crust and set aside.
  4. Make the Meringue: Preheat the oven to 350°F (175°C). In a large mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. Gradually add the sugar, one tablespoon at a time, and continue beating until stiff, glossy peaks form. Beat in the vanilla extract.
