Ingredients:

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella cheese, diced or mini mozzarella balls

Instructions:

  1. Prepare the Marinade: In a bowl, whisk together the tequila, lime juice, minced garlic, honey, cumin, salt, and black pepper.
  2. Marinate the Chicken: Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour (or up to overnight for more flavor).
  3. Preheat the Oven or Grill: If baking, preheat your oven to 400°F (200°C). If grilling, preheat your grill to medium-high heat.
  4. Cook the Chicken:
    • For Baking: Place the marinated chicken breasts in a baking dish. Bake for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
    • For Grilling: Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until fully cooked.
