  • Fresh thyme or parsley for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). If using a store-bought pie crust, fit it into a 9-inch pie dish and set aside.
  2. Sauté the leeks: Heat olive oil or butter in a skillet over medium heat. Add the sliced leeks and sauté for 5-7 minutes, or until softened but not browned. Set aside to cool slightly.
  3. Prepare the custard: In a medium bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg (if using) until well combined.
  4. Assemble the quiche: Spread the sautéed leeks evenly over the bottom of the prepared pie crust. Sprinkle the shredded cheese on top of the leeks, then pour the egg mixture over the cheese and leeks.
