INSTANT POT CHICKEN AND BROCCOLI

Instructions:

  1. Sauté the chicken: Set the Instant Pot to “Sauté” mode and heat the sesame oil or olive oil. Add the chicken pieces and cook for 3-4 minutes, until lightly browned. Remove the chicken and set it aside.
  2. Make the sauce: In the Instant Pot, add the soy sauce, honey, rice vinegar, garlic, ginger, and chicken broth. Stir to combine.
  3. Pressure cook the chicken: Return the chicken to the pot, secure the lid, and set the Instant Pot to “Manual” mode for 5 minutes on high pressure. Once the cooking time is done, allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  4. Cook the broccoli: While the chicken is cooking, steam the broccoli in a separate pot or in the microwave for 3-4 minutes until tender but still crisp. Alternatively, you can add the broccoli to the Instant Pot after releasing the pressure and set the pot to “Sauté” mode for 2-3 minutes until the broccoli is cooked to your liking.
  5. Thicken the sauce (optional): If you prefer a thicker sauce, stir in the cornstarch slurry and cook on “Sauté” mode for 1-2 minutes until the sauce thickens.
