Chicken Omelet is a protein-packed, hearty meal perfect for breakfast, lunch, or even a light dinner. This dish combines tender, seasoned chicken with fluffy eggs and your choice of vegetables and cheese to create a filling and flavorful omelet. Whether you’re using leftover roasted chicken or cooking fresh pieces, this omelet offers a delightful balance of savory flavors and textures. It’s a versatile dish that can be tailored to your preferences, making it a great way to start your day or satisfy your hunger at any time.

Ingredients:

  • 2 eggs
  • 1/2 cup cooked chicken breast, shredded or diced
  • 1/4 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1 tablespoon olive oil or butter
  • Salt and pepper, to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. Prepare the filling: Heat a skillet over medium heat and add the olive oil or butter. Sauté the diced onions and bell peppers for about 3-4 minutes until softened. Add the shredded chicken and cook for another 2 minutes, stirring to combine. Season with salt and pepper. Set aside.
  2. Whisk the eggs: In a small bowl, whisk the eggs with a pinch of salt and pepper until well combined.
  3. Cook the omelet: In the same skillet, add a little more oil or butter if needed. Pour in the whisked eggs and let them cook undisturbed for about 2 minutes, or until the edges begin to set. Use a spatula to gently lift the edges of the omelet and tilt the pan to allow any uncooked egg to flow to the edges.
  4. Add the filling: Once the eggs are mostly set but still slightly runny on top, evenly spread the chicken mixture and cheese over one half of the omelet. Fold the other half over the filling.
  5. Finish and serve: Cook for another 1-2 minutes until the cheese is melted and the omelet is fully cooked. Slide it onto a plate and garnish with fresh herbs, if desired.

Enjoy your Chicken Omelet as a satisfying, protein-rich meal that’s both easy to make and delicious!
