Slow-cooked to perfection, this pot roast becomes incredibly tender, infused with a rich medley of flavors from aromatic vegetables, herbs, and beef broth. Ingredients:

  • 3-4 lb chuck roast
  • 2 tbsp olive oil

Instructions:

  1. Preheat Oven: If using an oven, preheat it to 300°F (150°C). Alternatively, prepare your slow cooker.
  2. Season the Roast: Generously season the chuck roast with salt and pepper.
  3. Sear the Roast: Heat the olive oil in a large Dutch oven over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set it aside.
  4. Sauté the Aromatics: In the same pot, add the onions, carrots, and garlic. Sauté for 3-4 minutes until slightly softened. Stir in the tomato paste and cook for an additional minute.
  5. Deglaze: Pour in the red wine (if using) and beef broth, scraping up any browned bits from the bottom of the pot. Add the thyme, rosemary, and bay leaves.
  6. Add Potatoes and Roast: Place the potatoes around the seared roast in the pot. Cover with a lid.
  7. Slow Cook: If using an oven, transfer the Dutch oven to the preheated oven and cook for 3-4 hours, or until the roast is tender and easily pulls apart with a fork. Alternatively, set your slow cooker to low and cook for 8 hours.
  8. Serve: Remove the roast and vegetables from the pot and discard the bay leaves. Let the roast rest for a few minutes before slicing. Garnish with fresh parsley if desired.
