CRISPY POTATO SKINS

Ingredients:

  • 4 large russet potatoes
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

  • 4 slices cooked bacon, crumbled
  • 1/4 cup sour cream
  • 2 tbsp chopped chives or green onions

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).

  4. Bake again: Place the potato skins on a baking sheet, skin side up, and bake for 10 minutes to crisp them up. Flip the skins and bake for an additional 5 minutes, or until the edges are golden and crispy.
  5. Add the toppings: Remove the potato skins from the oven and fill each one with shredded cheddar cheese and crumbled bacon. Return to the oven and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
  6. Serve: Top each potato skin with a dollop of sour cream and sprinkle with chopped chives. Serve hot.
