Ingredients:

  • 2 packs instant ramen noodles (discard seasoning packets)
  • 1 lb boneless, skinless chicken breasts, sliced into thin strips
  • 2 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 1/4 cup chicken broth
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Green onions and sesame seeds (for garnish)

Instructions:

  1. Cook the Ramen:
    • Bring a pot of water to a boil and cook the ramen noodles according to the package instructions. Drain and set aside.
  2. Cook the Chicken:
    • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook for 4-5 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the remaining tablespoon of vegetable oil. Stir-fry the bell pepper, broccoli, and carrots for 3-4 minutes until they begin to soften. Add the minced garlic and grated ginger, and cook for another minute until fragrant.
  4. Combine and Stir-Fry:
    • Return the cooked chicken to the skillet. In a small bowl, mix the soy sauce, hoisin sauce, sesame oil, and chicken broth. Pour the sauce over the chicken and vegetables, tossing to coat. If you prefer a thicker sauce, stir in the cornstarch mixture and cook for another 1-2 minutes until the sauce thickens.
  5. Add the Noodles:
    • Toss the cooked ramen noodles into the skillet and stir until everything is evenly combined and heated through.
  6. Serve:
    • Garnish with green onions and sesame seeds, and serve hot.
