Rich Fruit Kuchens

Rich Fruit Kuchens are a delightful fusion of a tender, buttery pastry and a luscious fruit topping, perfect for a special breakfast, dessert, or an afternoon treat with coffee. Originating from German cuisine, these cakes offer a beautiful balance of sweetness and tartness, depending on the fruit you choose. The dough is soft and slightly sweet, providing a perfect base for the fruit, which can range from apples to plums, peaches, or even berries. The fruit is nestled in the dough, often topped with a sprinkle of cinnamon sugar or streusel, adding a satisfying crunch and a hint of spice. These kuchens are as versatile as they are delicious, easily adapted to the fruits of the season, making them a year-round favorite.

Ingredients:

For the Dough:

  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup warm water
  • 1/4 cup sugar
  • 1/2 cup milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt

For the Fruit Filling:

  • 4 cups sliced fruit (such as apples, plums, peaches, or berries)
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Optional Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup cold unsalted butter, cubed
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Prepare the Dough:
    • In a small bowl, dissolve the yeast in warm water with a pinch of sugar. Let it sit for 5-10 minutes until frothy.
    • In a large mixing bowl, combine the warm milk, melted butter, egg, and sugar. Add the yeast mixture and stir to combine.
    • Gradually add the flour and salt, mixing until a soft dough forms.
    • Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for 1-1.5 hours or until doubled in size.
  2. Prepare the Fruit Filling:
    • While the dough is rising, toss the sliced fruit with sugar, cinnamon, and lemon juice. Set aside.
  3. Assemble the Kuchens:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or two 9-inch round cake pans.
    • Punch down the risen dough and divide it into two equal parts if using round pans.
    • Roll out the dough to fit the bottom of your baking dish or pans, spreading it evenly.
    • Arrange the fruit mixture over the dough, leaving a small border around the edges.
  4. Prepare the Optional Streusel Topping:
    • In a small bowl, mix the flour, sugar, and cinnamon. Cut in the cold butter until the mixture resembles coarse crumbs.
    • Sprinkle the streusel evenly over the fruit.
  5. Bake the Kuchens:
    • Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the fruit is tender.
    • Allow the kuchens to cool slightly before serving.

Rich Fruit Kuchens are best enjoyed warm, either plain or with a dollop of whipped cream or a scoop of vanilla ice cream. Enjoy this classic German treat as a comforting and indulgent addition to any meal!
