HOMEMADE EGGNOG

Homemade Eggnog is a rich and creamy holiday classic that brings warmth and festive cheer to any gathering. Ingredients:

  • 4 large eggs, separated
  • 1/2 cup granulated sugar, divided
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 tsp vanilla extract

  • Pinch of ground cinnamon
  • 1/2 cup rum, bourbon, or brandy (optional)

Instructions:

  1. Beat the egg yolks: In a large bowl, whisk the egg yolks and 1/4 cup of sugar together until thick and pale.
  2. Heat the milk and cream: In a saucepan over medium heat, combine the milk, heavy cream, vanilla extract, nutmeg, and cinnamon. Heat until just simmering, but do not let it boil.
  3. Temper the eggs: Slowly pour the hot milk mixture into the egg yolks, whisking constantly to prevent the eggs from curdling. Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens slightly, about 3-5 minutes. Do not boil.
  4. Cool and chill: Remove the mixture from the heat and let it cool to room temperature. Once cooled, refrigerate the eggnog for at least 2 hours to chill.
  5. Beat the egg whites: In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/4 cup of sugar and continue beating until stiff peaks form.
  6. Fold in the egg whites: Gently fold the beaten egg whites into the chilled eggnog mixture. Stir in the alcohol if using.
  7. Serve: Pour the eggnog into glasses, top with whipped cream, and sprinkle with extra nutmeg.
