Roasted Cabbage

Roasted cabbage is a simple yet flavorful dish that brings out the natural sweetness and earthiness of cabbage. By roasting, the edges of the cabbage become caramelized, adding a delightful crispiness while the inner layers turn tender and juicy. This recipe is perfect as a side dish for any meal, offering a healthy and delicious way to enjoy this often-overlooked vegetable. With just a few basic ingredients, you can transform cabbage into a dish that even the pickiest eaters will love.

Ingredients:

  • 1 large green or red cabbage
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh lemon juice (optional)
  • Fresh herbs like parsley or thyme for garnish (optional)

Instructions:

  1. Preheat your oven: Start by preheating your oven to 400°F (200°C).
  2. Prepare the cabbage: Remove any loose outer leaves from the cabbage. Cut the cabbage into thick slices, about 1-inch thick, creating round “steaks.” If you prefer smaller pieces, you can also cut the cabbage into wedges.
  3. Season the cabbage: Arrange the cabbage slices or wedges on a large baking sheet. Drizzle olive oil over the cabbage, making sure to coat each piece evenly. Sprinkle with garlic powder, onion powder, smoked paprika (if using), salt, and pepper.
  4. Roast the cabbage: Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the cabbage is tender and the edges are golden brown and crispy. You may want to flip the cabbage halfway through to ensure even cooking.
  5. Serve: Remove the cabbage from the oven and squeeze a bit of fresh lemon juice over the top for a bright, zesty finish. Garnish with fresh herbs if desired, and serve hot.

Enjoy your roasted cabbage as a healthy side dish or a light main course!
