  • 1 jalapeño pepper, finely chopped (optional, for extra spice)
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken or beef broth
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain any excess fat.
  3. Add the diced onion, green bell pepper, jalapeño (if using), and garlic to the skillet. Sauté for 3-4 minutes, until the vegetables are softened.
  4. Stir in the chili powder, cumin, paprika, oregano, salt, and black pepper. Cook for 1-2 minutes to allow the spices to release their flavors.
  5. Add the uncooked rice, diced tomatoes with green chilies (with their juice), tomato sauce, and broth. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes, stirring occasionally.
  7. Transfer the mixture to a greased 9×13-inch baking dish. Cover with foil and bake in the preheated oven for 30-35 minutes, or until the rice is tender and has absorbed the liquid.
  8. Remove the foil, sprinkle the shredded cheddar cheese over the top, and return the dish to the oven. Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
