Zippy Pork Chili

Ingredients:

  • 1 lb pork shoulder, diced into bite-sized pieces
  • 1 tablespoon olive oil

  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1-2 jalapeños, seeded and chopped (adjust for desired heat)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin

  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • 1 tablespoon tomato paste
  • Optional toppings: shredded cheddar cheese, sour cream, chopped cilantro, sliced green onions

Instructions:

  1. Sear the Pork: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced pork shoulder and cook until browned on all sides, about 5-7 minutes. Remove the pork from the pot and set it aside.
