Ingredients:

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 1 (15-ounce) can white beans (cannellini or Great Northern), drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, with juice
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1/4 cup chopped fresh parsley for garnish (optional)
  • Crusty bread for serving

Instructions:

  1. Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. Cook the Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Simmer the Soup: Return the browned chicken to the pot. Add the white beans, diced tomatoes (with their juice), chicken broth, dried thyme, bay leaf, smoked paprika, salt, and pepper. Stir to combine. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the chicken is cooked through and the flavors are well blended.
  4. Adjust Seasoning: Taste the soup and adjust the seasoning with additional salt and pepper if needed. Remove the bay leaf before serving.
  5. Serve: Ladle the Chicken Cassoulet Soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread on the side.

This Chicken Cassoulet Soup is a delicious and hearty take on a French classic, perfect for a cozy meal that’s both flavorful and comforting. The tender chicken, creamy beans, and savory broth make this soup a go-to recipe for any time you need a warm, satisfying dish. Enjoy!
