Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk or heavy cream
  • 2 cups cooked chicken, diced or shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Filling:
    • In a large skillet over medium heat, melt the butter. Add the onion and garlic, and sauté for about 3 minutes until the onion is translucent.
    • Add the carrots and celery, and cook for an additional 5 minutes until tender.
    • Stir in the flour and cook for 1-2 minutes until the mixture is golden brown. Gradually add the chicken broth and milk, stirring constantly, until the sauce thickens.
    • Add the cooked chicken, peas, corn, thyme, rosemary, salt, and black pepper. Mix well and remove from heat. Let the filling cool slightly.
  3. Assemble the Potpie:
    • Transfer the chicken and vegetable filling to a 9-inch pie dish or an ovenproof baking dish.
    • Roll out the puff pastry on a lightly floured surface to fit over the dish. Place the pastry over the filling, trimming any excess and tucking the edges inside the dish. Cut slits in the top to allow steam to escape.
    • Brush the top with beaten egg for a golden finish.
  4. Bake:
    • Place the potpie on a baking sheet to catch any drips. Bake in the preheated oven for 25-30 minutes, or until the puff pastry is golden brown and the filling is bubbly.
  5. Serve:
    • Allow the potpie to cool for a few minutes before serving. Slice and enjoy the flaky, delicious potpie with family and friends.

Puff Pastry Chicken Potpie offers a delightful twist on a beloved classic, bringing a touch of elegance to a comforting meal that is perfect for any occasion. Enjoy the harmonious blend of flavors and textures in this delectable dish!
