Margarita Bars

Margarita Bars are the perfect treat for those who love the zesty flavors of a classic margarita. These bars combine the tangy punch of fresh lime juice with the sweetness of a buttery shortbread crust, all enhanced with a hint of tequila and orange liqueur for an authentic margarita experience. The creamy, citrusy filling is balanced by a dusting of powdered sugar on top, making these bars a refreshing and indulgent dessert for summer gatherings or any time you need a taste of the tropics.

Ingredients:

For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the Filling:

  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 1 tablespoon lime zest
  • 2 tablespoons tequila
  • 1 tablespoon orange liqueur (like Triple Sec or Cointreau)
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • A pinch of salt

For Topping:

  • Powdered sugar, for dusting

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, allowing the paper to overhang on the sides for easy removal.
  2. Make the Crust: In a large mixing bowl, beat together the softened butter and powdered sugar until light and fluffy. Add the flour and salt, and mix until just combined. The dough will be crumbly. Press the dough evenly into the bottom of the prepared baking dish. Bake for 20-25 minutes, or until the crust is lightly golden around the edges. Remove from the oven and set aside.
  3. Prepare the Filling: In another mixing bowl, whisk together the granulated sugar and eggs until smooth. Add the lime juice, lime zest, tequila, and orange liqueur, and mix until well combined. Stir in the flour, baking powder, and salt until the mixture is smooth.
  4. Bake the Bars: Pour the lime mixture over the baked crust, spreading it evenly. Bake for 20-25 minutes, or until the filling is set and slightly golden on top. The bars should be firm but still slightly jiggly in the center.
  5. Cool and Serve: Allow the bars to cool completely in the baking dish. Once cooled, use the parchment paper to lift the bars out of the dish. Dust the top with powdered sugar, then cut into squares.
  6. Enjoy: Serve the Margarita Bars chilled or at room temperature. They pair perfectly with a refreshing margarita or as a standalone treat!
