Chipotle Chili Dogs

Ingredients:

• For the Chili:
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 tbsp adobo sauce (from the chipotle peppers can)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
• For the Hot Dogs:
  • 8 hot dogs
  • 8 hot dog buns
  • Optional toppings: shredded cheese, chopped onions, sour cream, jalapeños, cilantro

Instructions:

1. Prepare the Chili:
   1. In a large skillet or pot, cook the ground beef over medium heat until browned. Drain any excess fat.
   2. Add the diced onion and garlic to the skillet and cook until softened, about 3-4 minutes.
   3. Stir in the diced tomatoes, kidney beans, chopped chipotle peppers, adobo sauce, chili powder, cumin, and smoked paprika.
   4. Bring the mixture to a simmer, then reduce the heat to low. Let the chili cook for 20-30 minutes, stirring occasionally, until it thickens. Season with salt and pepper to taste.
2. Cook the Hot Dogs:
   1. Grill or cook the hot dogs according to your preference. Toast the hot dog buns on the grill or in the oven until lightly golden.
3. Assemble the Chili Dogs:
   1. Place a hot dog in each toasted bun.
   2. Spoon a generous amount of chipotle chili over each hot dog.
